This is a really exciting bright and juicy coffee produced by Bette Buna in Guji Megadu, Ethiopia. The region is very mountainous and densely forested. The soil is rich and the potential for coffee is spectacular, making it one of the most exceptional coffee growing regions in the world.
Grown at high altitudes of 2000+ metres above sea level, clarity and acidity is boosted and the natural process amplifies the candy like sweetness and fruit forward profile in the cup. The ‘kickstart’ process was developed by the processing team at Bette Buna as a way to concentrate the sugars and change their structures before the normal natural processing begins. After taking the cherries to the wet mill, the team gave them a “kick” by putting them in an anaerobic environment for a short amount of time before continuing processing. Not long enough for official fermentation to begin, but long enough that the structure of the sugar within the cherries changed. This produces lots with more sweetness and body on top of the standard Sidamo natural profile.
In the cup, berry forward notes of cherry and blackberry lead into tropical flavours with a skittle like tangy sweetness and a delicate floral finish. Expect a vibrant, complex and juicy coffee. With a cup score of 87, this is a high quality specialty coffee that we are delighted to brew!
We love this coffee black on espresso as well as enjoying the fruit forward notes of our light roast as a pour over.
